Robust Intensity

A robust olive oil offers a bold flavor, a balanced bitterness, and is a very prominent peppery finish. It can be great for grilling, baking, sautéing, in sauces, on salads and pastas.

Medium Intensity

A medium olive oil offers a fruity taste, a grassy scent, and a peppery or spicy finish.

Mild Intensity

A mild olive oil often has a creamy, delicate, pleasant mouth feel often times with green almond and or balanced fruity, grassy notes.

Every 6 months we get fresh crush, cold-pressed extra virgin olive oil that goes through a quality assurance program to test the chemistry at the time of press to identify whether or not the biophenols, Dags, FFA, Oleic Acid, etc. defines it to be Robust, Medium, and Mild. Northern Hemisphere crush is Nov-Jan in U.S.A. and Europe such as California, Spain, Italy, Greece and Tunisia. Southern Hemisphere crush is April-June in South America like Chile, Australia, and South Africa.
