MAPLE & SAGE SWEET POTATOES AND BUTTERNUT SQUASH

Depending upon how many people you are serving, consider ½ -1 sweet potato peeled and diced per person 1-2 Butternut Squash peeled and diced depending upon your love of squash. 1 purple onion chopped finely. Toss the ingredients in 1/4 cup Mushroom & Sage Olive Oil and 1/4 cup of Maple Dark Balsamic and (depending upon quantity) and season to taste. Roast at 400 degrees until soft and caramelized generally around 20-30 minutes some ovens take longer.
