Coffee and tea are some of the most widely consumed beverages in the world, yet few people realize that growing, harvesting, and storage conditions can affect their purity and quality.
Coffee beans and tea leaves are agricultural crops. When they are grown or stored in warm, humid environments, mold can naturally develop on the plants or during storage. Some molds can produce compounds called mycotoxins, which are naturally occurring substances that may form when crops are improperly dried or stored.
One of the most commonly discussed mycotoxins in coffee is Ochratoxin A, which can develop if beans remain damp during processing or storage. While regulatory agencies set limits to keep food supplies safe, many lower-grade coffees and mass-produced products may still contain trace levels due to poor harvesting or storage practices.
